Shakshuka is one of the top demanding recipes of eggs. In Israel it is breakfast food, a bright, spicy start to the day with a pile of pita bread. It also makes excellent brunch or lunch food. It is rich in nutrients. Tunisian Jews have been recognized for making spicy versions of egg Shakshuka. The dish was brought to Israel by Maghrebi Jews, where it was widely adopted. The origin of the dish remains a matter of some controversy with competing claims of Moroccan, Tunisian, Turkish and Yemeni origins.
Shakshuka is a dish of eggs poached in a sauce of tomatoes, olive oil, peppers, onions and garlic. It is commonly spiced with cumin, paprika, cayenne pepper and nutmeg. It is traditionally served for breakfast with pita bread, challah, or naan and also pairs well with hummus, grits, roasted potatoes, herb salad, cucumber salad, or Greek salad.
Ingredients-
2 Onions
4 Cloves of Garlic- Minced
1 Medium Red Bell Pepper
1 Carrot
1/2 Cup Frozen Peas
2 Tbsp. Tomato paste
2 Cans or 400 gram diced Tomatoes
2 Tbsp. Oil
1 Tsp. Cumin powder
1 Tsp. Paprika
1 Tsp. Chilly Powder
1 Tsp Chilly Flakes
1 Tsp. Sugar
1 Tsp. Salt or as per taste
6 Eggs
Freshly ground black pepper
1 Tsp Oregano
Coriander Leaves for garnishing
Parsley for garnishing
Method-
1. Take a broad frying pan and put it on a stove. Put some oil in the frying pan.
2. Cut the onion in small pieces and cook for five minutes till the onion begins to soften.
3. Add minced garlic into the frying pan and fry for one to two minutes.
4. Add chopped bell pepper - red, yellow and green, to the frying pan.
5. You can add some more green vegetables to increase its nutritional value for children like-chopped carrot, green peas, beans etc.
6. Sauté all vegetables for five to seven minutes.
7. Add canned tomatoes and two table spoon tomato paste in it.
8. Now add all the spices- cumin powder, paprika, chilly powder, chilly flakes, sugar, salt, freshly ground black pepper and oregano.
9. Now cook on medium flame for 10-15 minutes until it starts to reduce.
10. After that using a spoon or a spatula make six pockets in the mixture and put one broken egg in every hole.
11. Now cover the pan and cook for ten to fifteen minutes or until the eggs are cooked.
12. Now add some freshly ground black pepper. Garnish it with fresh parsley and coriander leaves.
13. Cut the egg piece with vegetables and serve hot with Pitta Bread.
